Quinoa is one of Alpha’s favorite seeds, and he displays what it looks like dry. It looks like couscous and has the same mouth ‘feel’. It’s low on the glycemic index too, which it won’t cause a crazy spike in your insulin level. It’s not that caloric either! It only has 1 gram of sugar as well as fiber and protein too. It can be expensive, however. It comes in yellow, red, and black but they all taste the same to Alpha.
You cook it like rice (1 cup of quinoa with 2 cups of water, chicken stock, or beef broth). Bring to boil then simmer for 15 minutes until the liquid is absorb. If it’s crunchy, keep cooking. Alpha makes 3 cups on the weekend and then eats off of it for the rest of the week along with his lean protein. He seasons with S&P and / or hot sauce.
